Preparation Steps
- Preheat your oven to 350°F (175°C). In a large skillet, melt 2 tablespoons of unsalted butter over medium heat. Add the thinly sliced sweet onions and sauté for about 15 minutes, or until soft and lightly golden.
- In a large mixing bowl, whisk together 2 large beaten eggs, 1 cup of sour cream, 1 teaspoon of salt, and ½ teaspoon of black pepper until smooth. Gently fold in the sautéed onions and 1 cup of sharp cheddar cheese.
- Lightly grease a 9x13-inch baking dish. Pour the onion and custard mixture into the prepared dish, spreading it out evenly. Sprinkle the remaining 1 cup of cheese over the top.
- Combine 1 cup of crushed butter crackers with 2 tablespoons of melted butter, scattering this over the cheese for a crunchy topping.
- Bake uncovered for 30-35 minutes until golden brown and bubbling. Let cool for about 5-10 minutes before serving.

Notes
To achieve the best texture, reheat leftovers in the oven instead of the microwave.
