For the Puff Pastry

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Gather your ingredients.
  2. In a skillet, heat about a tablespoon of olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper, then transfer the mixture to a bowl to cool.
  3. On a floured surface, roll out your puff pastry into a rectangle (about 10x12 inches). Dust the surface and rolling pin with flour.
  4. Spread the cooled spinach mixture onto one half of the pastry, leaving a small border. Crumble feta over the spinach and fold the other half of the pastry over the filling, pressing the edges to seal.
  5. Gently flatten the sealed pastry with a rolling pin and cut into 1-inch strips using a sharp knife or pizza cutter.
  6. Twist each strip from both ends to create a spiral shape and place them on the baking sheet with space between each.
  7. Beat an egg in a small bowl and brush it over the tops of the twisted pastries. Optionally, sprinkle sesame seeds or additional herbs on top.
  8. Bake the twists for 15-18 minutes, or until golden brown. Let cool for a few minutes before serving.
