- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut each salmon fillet lengthwise to create pockets, being careful not to slice all the way through.
- Brush the salmon fillets with olive oil and season generously with salt and pepper.
- In a skillet over medium heat, sauté spinach, Italian seasoning, paprika, and cayenne pepper for about 2 minutes until spinach is wilted.
- Remove skillet from heat and stir in chopped roasted red peppers, feta, and parmesan into the sautéed spinach.
- Stuff each salmon pocket with the spinach and feta mixture until generously filled.
- Place the stuffed salmon on the prepared baking sheet and bake for 12-17 minutes until cooked through.
