  • 1 teaspoon Italian Seasoning Herb blend; substitute with equal parts oregano, basil, and thyme.
  • 1/2 teaspoon Paprika Mild heat; use smoked paprika for a different flavor.
  • 1/4 teaspoon Cayenne Pepper Adjust to taste or omit if preferred.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut each salmon fillet lengthwise to create pockets, being careful not to slice all the way through.
  3. Brush the salmon fillets with olive oil and season generously with salt and pepper.
  4. In a skillet over medium heat, sauté spinach, Italian seasoning, paprika, and cayenne pepper for about 2 minutes until spinach is wilted.
  5. Remove skillet from heat and stir in chopped roasted red peppers, feta, and parmesan into the sautéed spinach.
  6. Stuff each salmon pocket with the spinach and feta mixture until generously filled.
  7. Place the stuffed salmon on the prepared baking sheet and bake for 12-17 minutes until cooked through.
