- Spread a generous layer of sun-dried tomato pesto on one side of each slice of bread.
- Place a slice of mozzarella cheese on top of the pesto on one slice of bread, then top with the second slice of bread, pesto side down.
- Preheat a skillet over medium heat and melt 1 tablespoon of butter.
- Place the sandwich in the skillet and cook for 3 to 4 minutes until the bottom is golden brown.
- Flip the sandwich and cook for another 3 to 4 minutes until both sides are golden and the cheese is melted.
- Remove from skillet, let cool for a minute, then slice and serve.
