Cooking Instructions
- Preheat your oven to 400°F or your air fryer to 380°F.
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, eggs, garlic powder, salt and pepper. Mix gently.
- Form the meat mixture into golf ball-sized meatballs and place on a baking sheet or in the air fryer basket.
- Cook in the air fryer for about 10 minutes or bake in the oven for 20-25 minutes until cooked through.
- In a medium bowl, whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch.
- Heat vegetable oil in a skillet, add chopped onions and bell peppers, sauté for 3-4 minutes, then add minced garlic.
- Pour the whisked sauce mixture into the skillet and stir until thickened, about 3-4 minutes.
- Add the cooked meatballs and pineapple chunks to the skillet, gently toss everything together.
- Serve the Sweet and Sour Meatballs on a platter or over rice.
