Ingredients
  

For the Meatballs
  • 1 lb Ground Beef Consider using ground chicken or turkey for a leaner alternative.
  • 1 cup Breadcrumbs Opt for gluten-free breadcrumbs if avoiding gluten.
  • 1 medium Onion Finely chopped or shredded; shallots can be substituted.
  • 1 large Egg Essential for binding.
  • 1 tsp Garlic Powder Use fresh garlic for a stronger flavor.
For the Sauce
  • 1/2 cup Rice Vinegar Apple cider vinegar can be used as a substitute.
  • 1/3 cup Brown Sugar Honey or agave syrup can replace it.
  • 1 cup Chicken Broth Use vegetable broth for a vegetarian option.
  • 1/2 cup Ketchup Essential for the sweet-tangy taste.
  • 2 tbsp Tomato Paste No substitutes recommended.
  • 1/4 cup Pineapple Juice Use juice from canned pineapple.
  • 1 tbsp Cornstarch Arrowroot powder is a great gluten-free alternative.
For the Sauté
  • 2 tbsp Vegetable Oil Olive oil can be used as an alternative.
  • 1 cup Bell Peppers Feel free to swap for other varieties.

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F or your air fryer to 380°F.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, eggs, garlic powder, salt and pepper. Mix gently.
  3. Form the meat mixture into golf ball-sized meatballs and place on a baking sheet or in the air fryer basket.
  4. Cook in the air fryer for about 10 minutes or bake in the oven for 20-25 minutes until cooked through.
  5. In a medium bowl, whisk together rice vinegar, brown sugar, chicken broth, ketchup, tomato paste, pineapple juice, and cornstarch.
  6. Heat vegetable oil in a skillet, add chopped onions and bell peppers, sauté for 3-4 minutes, then add minced garlic.
  7. Pour the whisked sauce mixture into the skillet and stir until thickened, about 3-4 minutes.
  8. Add the cooked meatballs and pineapple chunks to the skillet, gently toss everything together.
  9. Serve the Sweet and Sour Meatballs on a platter or over rice.
