Ingredients
  

Peanut Sauce
  • 1/2 cup Peanut Butter or sunflower seed butter for peanut-free
  • 1/4 cup Soy Sauce or tamari for gluten-free
  • 2 tablespoons Honey or maple syrup for vegan
  • 2 tablespoons Rice Vinegar or white vinegar
  • 1 tablespoon Lime Juice or lemon juice
  • 1 teaspoon Ginger or ground ginger
  • 2 cloves Garlic or garlic powder
  • 1 teaspoon Sriracha adjust for spice preference
Wrap Filling
  • 2 cups Chicken (cooked, shredded) or tofu for vegetarian option
  • 2 cups Coleslaw Mix or shredded lettuce or carrots
  • 1 medium Carrot grated or shredded
  • 2 cups Spinach or kale
  • 1 medium Cucumber sliced or zucchini
  • 1/4 cup Cilantro or parsley
  • 1/4 cup Peanuts (chopped) omit for nut-free
Wraps
  • 4 large Tortillas for wrapping

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, grated ginger, minced garlic, and sriracha until smooth.
  2. If thick, thin with warm water until pourable.
Filling Preparation
  1. In a large mixing bowl, combine chicken, coleslaw mix, carrot, spinach, cucumber, cilantro, and peanuts.
  2. Drizzle two-thirds of the peanut sauce over the mixture and toss until well-coated.
  3. Let rest for 3-5 minutes.
Tortilla Preparation
  1. Warm tortillas in a damp paper towel in microwave for 30 seconds or in a skillet until soft.
Assembly
  1. Spoon filling into the center of a warm tortilla, fold sides, and roll tightly.
  2. Slice in half if desired and drizzle with remaining peanut sauce.
