  • 1 can Black Beans drained and rinsed
  • 1 cup Breadcrumbs substitute with almond flour for gluten-free
  • 2 cloves Garlic minced
  • 1 teaspoon Smoked Paprika regular paprika can be used
  • 1 teaspoon Cumin omit if desired
  • to taste Salt and Pepper for seasoning

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mash your cooked sweet potatoes in a large mixing bowl until smooth and creamy.
  3. Add cooked quinoa, black beans, breadcrumbs, garlic, smoked paprika, cumin, salt, and pepper to the bowl and mix thoroughly.
  4. Roll the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
  5. Bake in the oven for 25-30 minutes until golden brown and firm to the touch.
  6. Allow meatballs to cool slightly before serving hot with your favorite sauce, over pasta, or in a sandwich.
