  • 300 ml Water For boiling the glass noodles
  • 1 pack Glass Noodles Provides chewy texture
  • 200 g Protein (Minced Chicken, Prawns, Squid) Choose your favorite, or tofu for vegetarian option
  • 1 medium Red Onion Thinly sliced
  • 20 g Cilantro or Coriander Fresh; can substitute with parsley
  • 30 g Dried Shrimps Optional for umami flavor
For the Dressing
  • 3 tbsp Fish Sauce For authentic flavor
  • 2 tbsp Lime Juice Freshly squeezed; lemon juice can be substituted
  • 1 tbsp Palm Sugar Brown sugar can also be used
  • 2 cloves Garlic Minced
  • 2 pieces Thai Bird's Eye Chillies Adjust according to spice tolerance
  • 20 g Cilantro or Coriander Root Optional for extra herb flavor

Method
 

Step-by-Step Instructions
  1. Boil and soak glass noodles by bringing 300ml water to a boil in a frying pan, adding glass noodles and cooking for 3-5 minutes until soft. Drain and rinse under cold water.
  2. Cook the protein by adding a small amount of water to a pot, simmering, and mixing proteins with fish sauce for about 5-7 minutes until cooked through.
  3. Prepare the dressing by blending fish sauce, lime juice, palm sugar, minced garlic, and chilies until smooth and aromatic.
  4. Mix salad ingredients in a large mixing bowl with drained glass noodles, cooked protein, sliced red onion, and cilantro.
  5. Toss with dressing, adjust seasoning, and serve immediately. Enjoy fresh at room temperature or chilled.
