Step-by-Step Instructions
  1. Begin by rinsing 1 cup of long-grain white rice under cold running water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice with 2 cups of vegetable broth, 1 teaspoon of salt, and 1 teaspoon of garlic powder. Stir gently and bring to a rolling boil.
  3. Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and simmer undisturbed for 18 minutes.
  4. After 18 minutes, remove the saucepan from the heat and let the rice rest for an additional 5 minutes.
  5. Using a fork, fluff the rice to separate the grains and stir in 1/4 cup of freshly chopped cilantro and the juice from one lime.
  6. Drizzle with 1 tablespoon of olive oil and give it a gentle mix, adjust seasoning if needed.
