- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Lay the saltine crackers in a single layer on the prepared baking sheet.
- In a medium saucepan over medium heat, combine the unsalted butter and brown sugar. Stir continuously until it melts and comes to a gentle boil, about 3-5 minutes.
- Once boiling, remove from heat and carefully pour the toffee mixture over the arranged saltine crackers. Bake for 5-7 minutes until bubbly and golden.
- Remove from the oven and sprinkle semi-sweet chocolate chips generously over the hot toffee to melt.
- Mix granulated sugar and cinnamon together, then sprinkle over the melted chocolate layer.
- Sprinkle a light dusting of sea salt over the top.
- Allow to cool completely at room temperature, then break into pieces.
