- Pat the salmon filets dry with paper towels. Season both sides with kosher salt and black pepper.
- Heat a large skillet over medium-high heat and add olive oil. Sear the salmon skin-side down for 3–4 minutes until golden. Flip and cook for another 3–4 minutes.
- In the same skillet, lower heat to medium and add chopped onion. Sauté for about 2 minutes until translucent. Stir in sun-dried tomatoes, cherry tomatoes, and minced garlic. Cook for 3–5 minutes.
- Pour in heavy cream, stirring to blend. Add Parmesan, paprika, and Italian seasoning. Simmer for about 3 minutes until thickens slightly.
- Stir in fresh baby spinach and simmer for 2–3 minutes until wilted.
- Return salmon to skillet, cover and simmer for 5–10 minutes until cooked through and flaky.
