Step-by-Step Instructions
  1. Pat the salmon filets dry with paper towels. Season both sides with kosher salt and black pepper.
  2. Heat a large skillet over medium-high heat and add olive oil. Sear the salmon skin-side down for 3–4 minutes until golden. Flip and cook for another 3–4 minutes.
  3. In the same skillet, lower heat to medium and add chopped onion. Sauté for about 2 minutes until translucent. Stir in sun-dried tomatoes, cherry tomatoes, and minced garlic. Cook for 3–5 minutes.
  4. Pour in heavy cream, stirring to blend. Add Parmesan, paprika, and Italian seasoning. Simmer for about 3 minutes until thickens slightly.
  5. Stir in fresh baby spinach and simmer for 2–3 minutes until wilted.
  6. Return salmon to skillet, cover and simmer for 5–10 minutes until cooked through and flaky.
