  • 2 medium zucchinis grated and excess moisture removed
  • 1 cup corn kernels fresh, canned, or frozen (thawed)
  • 1 medium red onion diced; substitute with green onions if desired
  • 2 large eggs or use chickpea flour and extra zucchini juice for vegan
  • 1 cup flour chickpea flour preferred, all-purpose or gluten-free can be used
  • 1 teaspoon baking powder
  • 1/2 cup Parmesan cheese or nutritional yeast for vegan
  • 1/4 cup chopped herbs cilantro or parsley, based on preference
  • to taste salt
  • to taste pepper
For Baking
  • 2 tablespoons olive oil for light greasing
For Serving
  • 1 cup Greek yogurt sauce with herbs or spices if desired

Method
 

Directions
  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper.
  2. Grate medium-sized zucchinis and transfer them into a clean tea towel. Allow to drain for about 10 minutes.
  3. In a large bowl, combine corn kernels, diced red onion, chopped herbs, eggs, and Parmesan cheese. Season with salt and pepper.
  4. Firmly squeeze the zucchini to remove remaining liquid. Fold the zucchini into the corn mixture.
  5. Sprinkle in the flour and baking powder, mixing until just combined. Avoid overmixing.
  6. Scoop portions of the batter, roll them into balls, and flatten each slightly before placing on the baking sheet.
  7. Lightly spray or brush the tops of the fritters with olive oil.
  8. Bake in the preheated oven for about 20 minutes, until golden brown and firm.
  9. Remove from the oven and let cool on the baking sheet for a few minutes before serving warm.
