Baking Instructions
- Preheat your oven to 350°F (180°C) and prepare a loaf pan by lining it with parchment paper.
- In a large mixing bowl, whisk together the pumpkin puree, Greek yogurt, melted butter, vanilla extract, kosher salt, and the room temperature egg until well-blended.
- Stir in the granulated sugar and brown sugar, mixing well. Sift in the Dutch process cocoa powder and fold it gently into the wet ingredients.
- Gradually add the all-purpose flour and baking soda, stirring gently until just combined. Fold in the chocolate chips.
- Pour the batter into your prepared loaf pan and smooth it out evenly. Sprinkle additional chocolate chips on top.
- Bake for 50-60 minutes, checking doneness with a toothpick in the center. It should come out clean or with a few moist crumbs.
- Once baked, cool in the pan for 20 minutes before transferring to a wire rack to cool completely.
