- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Roll thawed puff pastry to about 1/8 inch thick and cut into 2-inch circles, aiming for 24 pieces.
- Press down in the center of each pastry circle to create wells for the filling.
- Spoon approximately 1 tablespoon of goat cheese into each well.
- Bake in the preheated oven for 8 to 10 minutes until golden brown.
- Remove from the oven, drizzle warm bites with honey, and sprinkle with fresh thyme.
