- Preheat your oven to 400°F (200°C). Allow approximately 10-15 minutes for the oven to reach the desired heat.
- In a large mixing bowl, combine ground chicken, red curry paste, minced garlic, grated ginger, fish sauce, panko breadcrumbs, and beaten egg. Mix gently until just incorporated.
- Scoop and shape the chicken mixture into golf ball-sized meatballs, about 1 to 1.5 inches in diameter. Place on a parchment-lined baking sheet, spaced evenly.
- Transfer the baking sheet to the oven and bake the meatballs for 25-30 minutes, turning halfway for even browning. They're done when golden brown and an internal thermometer reads at least 165°F (74°C).
- Remove the meatballs from the oven and let them cool. Garnish with cilantro and sliced green onions before serving.
