Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Allow approximately 10-15 minutes for the oven to reach the desired heat.
  2. In a large mixing bowl, combine ground chicken, red curry paste, minced garlic, grated ginger, fish sauce, panko breadcrumbs, and beaten egg. Mix gently until just incorporated.
  3. Scoop and shape the chicken mixture into golf ball-sized meatballs, about 1 to 1.5 inches in diameter. Place on a parchment-lined baking sheet, spaced evenly.
  4. Transfer the baking sheet to the oven and bake the meatballs for 25-30 minutes, turning halfway for even browning. They're done when golden brown and an internal thermometer reads at least 165°F (74°C).
  5. Remove the meatballs from the oven and let them cool. Garnish with cilantro and sliced green onions before serving.
