Steps to Prepare
  1. In a mixing bowl, combine 8 ounces of softened cream cheese and 1 teaspoon of mint extract on low speed using a hand mixer until creamy and smooth.
  2. Gradually incorporate 2 cups of powdered sugar and 1-2 tablespoons of milk, mixing slowly on low speed until fully blended.
  3. Gently fold in 1 cup of powdered sugar and 2 tablespoons of holiday sprinkles until well combined.
  4. If the mixture feels sticky, dust hands with powdered sugar and knead in a few more tablespoons until smooth.
  5. Combine granulated sugar with 2 tablespoons of holiday sprinkles in a separate small bowl for coating.
  6. Shape the mixture into 3/4-inch balls and roll in the sugar and sprinkle mixture until well coated.
  7. Place rolled balls on a baking sheet lined with parchment paper and chill in the refrigerator for 30 minutes.
  8. After chilling, flatten each mint slightly with a fork and let sit at room temperature.
