Batter
  • 1 cup cottage cheese can substitute with Greek yogurt
  • 1/2 cup peanut butter or any nut/seed butter for nut-free
  • 1/4 cup maple syrup honey or agave syrup can be used
  • 1 teaspoon vanilla extract can be omitted
  • 1/2 cup chocolate protein powder or vanilla protein powder
  • 1/4 cup cocoa powder or substitute with carob powder
  • 1/2 cup almond flour can use coconut flour, less needed
  • 1 pinch salt omit if reducing sodium

Preparation
  1. In a food processor, combine cottage cheese, peanut butter, maple syrup, and vanilla extract. Blend until smooth and creamy.
  2. Add chocolate protein powder, cocoa powder, almond flour, and salt to the mixture. Pulse until fully incorporated.
  3. Check texture; add water if too dry or more almond flour if too wet until the right consistency is achieved.
  4. Scoop 1 to 1.5 tablespoons of dough and roll into balls. Repeat until all dough is used.
  5. Place on a parchment-lined plate and refrigerate for 30 minutes or freeze for 15 minutes to firm up.
  6. For a chocolate coating, melt chocolate chips with coconut oil and dip each ball, then refrigerate again to set.
