  • 1 pound ground chicken
  • 2 tablespoons chipotle peppers in adobo sauce finely chopped
  • 2 tablespoons adobo sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/2 cup breadcrumbs use panko for extra crunch
  • 1 large egg beaten
For the Chipotle Mayo
  • 1/2 cup mayonnaise or Greek yogurt for lighter option
  • 1 chipotle pepper chopped adjust for heat level
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder

  • 4 pieces burger buns toasted
  • 1 cup lettuce fresh
  • 1 cup tomatoes sliced
  • 1/2 cup red onions sliced
  • 1/4 cup pickled jalapeños optional

Preparation
  1. In a large mixing bowl, combine the ground chicken, finely chopped chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and the beaten egg. Mix thoroughly with your hands until well blended.
  2. Divide the chicken mixture into four equal portions, then shape each portion into a patty about ½ inch thick.
  3. Heat a skillet over medium heat or preheat your grill to medium-high. Lightly grease to prevent sticking and cook the patties for about 5-6 minutes on each side, or until internal temperature reaches 165°F.
  4. In a separate mixing bowl, whisk together mayonnaise, chopped chipotle pepper, lime juice, garlic powder, and a pinch of salt.
  5. Toast your burger buns, then spread a layer of chipotle mayo on the bottom half of each bun. Layer with lettuce, a chicken patty, tomato, red onion, and pickled jalapeños.
  6. Serve immediately for the best taste and texture.
