  • 375 g Eating Apples e.g., russets
For the Custard
  • 90 g Butter divided
  • 60 g Caster Sugar plus extra for topping
  • Lemon Rind grated
  • 45 g Plain Flour or Cornflour
  • 500 ml Whole Milk or plant-based milk for vegan option
  • 3 large Egg Yolks
  • 1.5 teaspoons Vanilla Bean Paste or Extract
For the Topping
  • 60 g Demerara Sugar
  • 0.5 teaspoon Ground Cinnamon

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).

  2. Peel, core, and chop both cooking and eating apples into bite-sized pieces.

  3. Melt 45 g of butter over medium heat. Add the chopped apples and caster sugar. Stir and cook for about 5 to 7 minutes.

  4. In another saucepan, melt the remaining 45 g of butter over low heat. Add in 45 g of plain flour and mix continuously.

  5. Gradually whisk in the milk until the mixture is smooth and slightly thickened. Set aside to cool slightly.

  6. In a medium bowl, whisk together the egg yolks and vanilla extract. Slowly whisk the warm milk mixture into the egg yolks.
