- Preheat your oven to 180°C (350°F).

- Peel, core, and chop both cooking and eating apples into bite-sized pieces.

- Melt 45 g of butter over medium heat. Add the chopped apples and caster sugar. Stir and cook for about 5 to 7 minutes.

- In another saucepan, melt the remaining 45 g of butter over low heat. Add in 45 g of plain flour and mix continuously.

- Gradually whisk in the milk until the mixture is smooth and slightly thickened. Set aside to cool slightly.

- In a medium bowl, whisk together the egg yolks and vanilla extract. Slowly whisk the warm milk mixture into the egg yolks.

- Pour the custard mixture over the apple base in the baking dish.

- Combine the demerara sugar and ground cinnamon. Sprinkle generously over the top.

- Bake for about 20 minutes, or until the top is golden brown and bubbling.
