Main Instructions

  2. Line your baking sheet with parchment paper.
  3. Rinse your fresh carrots under cold water, scrubbing off any dirt. Trim the tops and tails, and slice larger carrots into 1-inch pieces.
  4. Toss the carrots with olive oil, salt, and pepper in a large bowl.
  5. Spread the seasoned carrots on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through.
  6. While the carrots are roasting, whip the ricotta with a pinch of sea salt and a splash of olive oil, adding milk as needed for texture.
  7. In a small saucepan over low heat, mix honey and chili flakes for about 5 minutes.
  8. Once roasted, remove the carrots from the oven, plate them over whipped ricotta, drizzle with spicy honey, and garnish with fresh herbs.
