Step-by-Step Instructions
  1. Begin by finely chopping or pulsing your fresh salmon fillet in a food processor until it's coarsely minced. In a large mixing bowl, combine the salmon with chopped parsley, cilantro, breadcrumbs (or almond flour), the large egg, minced garlic, smoked paprika, lemon zest, salt, and pepper. Mix thoroughly until well incorporated.
  2. With clean hands, take about two tablespoons of the salmon mixture and roll it into balls about 2 inches in diameter, aiming to create 12-14 evenly sized balls.
  3. Heat a skillet over medium heat and add a tablespoon of olive oil. Once shimmering, carefully place the salmon balls in the pan and cook for 3-4 minutes on each side until golden brown.
  4. In a food processor, blend together the ripe avocado, fresh cilantro, Greek yogurt (or sour cream), lime juice, and a pinch of salt and pepper until smooth and creamy.
