Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking sheet by lining it with parchment paper or spraying with cooking spray.
  2. Sauté 2 cups of fresh spinach over medium heat for about 3 minutes or until wilted. Remove from heat and let cool before mixing with cream cheese and Parmesan.
  3. Pat dry 4 salmon fillets with paper towels. Season both sides with blackening seasoning.
  4. Cut a pocket into each salmon fillet and fill with the creamy spinach mixture, pressing gently.
  5. Place stuffed salmon on the prepared baking sheet and drizzle with lemon juice. Bake for 15-20 minutes until salmon flakes easily.
  6. Remove from the oven and let rest for a few minutes before serving with lemon slices or fresh herbs.
