  • 1 pound Flank Steak or Skirt Steak Choose for tenderness and flavor
  • 3 tablespoons Soy Sauce Can substitute with tamari for gluten-free
  • 2 tablespoons Peanut Oil or Vegetable Oil Use another neutral oil if needed
  • 1 tablespoon Cornstarch Thickens sauce and tenderizes meat
  • 1 teaspoon Baking Soda Optional for tenderizing
For the Sauce
  • 1 cup Chicken or Beef Stock Vegetable stock can be used for vegetarian
  • 2 tablespoons Shaoxing Wine or Dry Sherry Mirin can be a sweeter substitute
  • 2 tablespoons Dark Soy Sauce Regular soy sauce can be a substitute
  • 1 tablespoon Brown Sugar or White Sugar Adjust based on preference
For the Vegetables
  • 4 cups Broccoli Florets Can swap with other veggies
  • 2 cloves Garlic Minced, fresh is best
  • 1 tablespoon Ginger Minced, fresh preferred

Method
 

Step-by-Step Instructions
  1. Slice the flank steak against the grain into thin strips, about ¼ inch thick. Marinate with soy sauce, peanut oil, and cornstarch for 10 minutes.
  2. Whisk together chicken stock, Shaoxing wine, dark soy sauce, brown sugar, and cornstarch in a bowl until smooth.
  3. Bring about half an inch of water to boil in a nonstick skillet, steam the broccoli for about 1 minute until bright green and slightly tender.
  4. Heat the skillet over high heat, add a splash of peanut oil, sear the marinated beef for about 30 seconds on each side, then add garlic and ginger for another 15 seconds.
  5. Return steamed broccoli to the skillet, pour the sauce over, and stir to combine. Cook for about 1 minute until sauce thickens.
  6. Transfer the stir-fry to a serving plate and enjoy hot, preferably with steamed rice.
