  • 4 oz feta cheese crumbled, divided

Step-by-Step Instructions
  1. Heat a large skillet over medium heat. Add olive oil and season shrimp with chili powder and salt. Cook for 3-4 minutes until pink and opaque. Remove and set aside.
  2. Melt butter in the same skillet, add onions, and sauté for about 4 minutes until soft.
  3. Stir in minced garlic and cook for another 2 minutes until fragrant.
  4. Add corn and smoked paprika, stir, and heat through for about 3 minutes.
  5. Pour in half-and-half and simmer. Gradually mix in crumbled feta until melted.
  6. Squeeze lime juice, return shrimp to skillet, and heat for 2 minutes. Top with remaining corn, lime slices, and cilantro.
