Step-by-Step Instructions
  1. Finely chop the onion, carrots, celery, garlic, and ginger before cooking.
  2. In a large pot, heat oil over medium heat and sauté the onion until translucent.
  3. Stir in minced garlic, ginger, and curry powder, cooking until fragrant.
  4. Add the prepared carrots, celery, and rinsed lentils, stirring for 2-3 minutes.
  5. Pour in vegetable broth and coconut milk, and bring to a simmer.
  6. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
  7. Stir in lime juice, taste and adjust seasoning, then serve warm.
